My very simple and delicious recipe for Teriyaki Chicken & Veggies. The veggies are crisp and the chicken is moist. You cant go wrong with this Asian inspired dish!
Teriyaki Chicken & Veggies.
2 large chicken breasts sliced or 1 pound of raw chicken tenders
1 red bell pepper
1 green bell pepper
1 white onion
1 cup of chopped broccoli
1 cup chopped baby carrots
2 tbsp olive oil
**desired serving of white rice
1/2 cup low sodium soy sauce
3 tbsp dark brown sugar
3/4 cup water
1/2 tbsp minced garlic
3 tbsp honey
1 tbsp ground ginger
1 tbsp rice vinegar
1 1/2 tbsp corn starch + 2 tbsp warm water
1. Chop all veggies.
2. Combine in a medium sauce pan, soy sauce, brown sugar, water, garlic, honey, ginger and rice vinegar.
3. Heat teriyaki mixture on medium high heat until sauce is boiling, stirring often. Once sauce is boiling add cornstarch and water mixture. Combine completely until sauce thickens. Remove from heat.
4. Heat 2 tbsp of olive oil to a saute pan on medium high heat. Add chicken to pan and stir often until chicken is cooked through. Add veggies to chicken and saute for 2-3 minutes.
5. Turn to low heat and stir in teriyaki sauce. Stir until well combined.
**I recommend serving this dish with white rice.
